Quick & Easy Instant Pot Pulled Pork - Meal Prepping for an Easy Life

I'm always looking to make my day easier and have found meal prepping is the way to go. It's saves you money and time during a busy week. The recipe takes about 2 hours from start to finish with 1 hour in the Instant Pot. The pulled pork is moist and delicious and when frozen, can be a quick meal.
Why Use an Instant Pot for Pulled Pork?
The Instant Pot is a fantastic kitchen gadget. It cooks food quickly, retains flavors, and makes clean-up a breeze. For pulled pork, it creates tender meat in a fraction of the time compared to traditional methods.
A few things you are going to need
I absolutely love my 8 Qt. Instant Pot. I received it as a Christmas gift a few years ago and wouldn't use anything else. Instant Pot has 7 functions: Pressure Cooker, Slow Rice Cooker, Steamer, Sauté,
Yogurt Maker, Warmer & Sterilizer. It is easy to use and dishwasher safe.

Ingredients - What you'll need
3-4 lb. Lean boneless pork roast
3 tbs. Smoke paprika
1 tbs. Salt
1 tbs. Ground black pepper
1 tbs. Garlic powder
1 tbs. Onion powder
1 tbs. Sage
1 tbs. Thyme
1 tbs. cumin
Chipotle pepper - Add the amount with your heart
1 tbs. Liquid smoke
1-2 Cloves fresh garlic
1 cup Water.
Directions - Let's get cooking!
Cut the pork roast into about 4" chunks. With a 4 lb. roast, i cut the roast into 4 pieces.
In a small bowl, combine the smoke paprika, salt, ground black pepper, garlic powder, onion powder, sage, thyme, cumin, and chipotle pepper.
Rub the spice mixture over the pork chunks. you can let marinate in the
refrigerator for a few hours.
Using the inner liner of your Instant Pot add a few tablespoons of Avocado Oil and set on the sauté mode.
Sear each side of the pork chunks. You may have to do this in batches.
Remove the chunks and add about 1 cup of water.
Deglaze/Scrape the bottom of the Instant Pot liner with a wooden spoon to loosen all the goodness from the bottom.
Add the garlic and liquid smoke.
Place the pork chunks back in the pot and secure the lid.
Click the pressure cook mode and set for 1 hr. on high.
When done, let the pressure release naturally.
Once that is done, remove the pork chunks and put them on a clean cutting board to shred with a fork and knife. Save the juice to pour over the pulled pork.
Divide the shredded pork into meal-sized servings and place them into freezer boxes. Let cool before placing them in the freezer.
